The Little Jumbo: a Speakeasy You Won’t Want to Miss

The Little Jumbo resembles something out of the 1880s. Warm lighting, brick walls, booze stored in something like old bookshelves. This ambiance isn’t an accident; it’s extreme attention to detail. The owners named their restaurant and bar after an establishment once owned by the father of modern mixology, Harry Johnson.

The original Little Jumbo received Johnson as its owner way back in 1882 in New York City. This modern homage in Victoria prides itself in “the fine craft of preparing fresh local food with a focus on continental and contemporary, and pairing it with fine wines and the best of classic and modern mixology.” And all in the spirit of Harry Johnson.

Every year, over one million show-goers converge on Calgary for the Calgary Stampede. Music, rodeos, rides, food, culture, family, and fun. Basically an amazing week of western fun. And what would a visit to such an amazing event be without… a custom cocktail???

The Jerker Cocktail

Don’t forget the jerky! None of that pre-packaged stuff, neither. Go visit your local butcher or jerky-makin’ establishment and buy yourself something nice; treat yourself. No preservatives. It’s jerky! It’s made to last.

Recipe:

Cayenne pepper, diced and mashed

Jerky-infused whisky

Tempranillo (In this case, Campo Viejo)

Plum sauce

Lemon juice

Shake over crushed ice, strain into a chilled glass. Garnish with lemon rind wrapped around jerky.

Vlog 6: Yoho National Park and the Yoho Snakebite

Yoho National Park and the Nimble Crew

After some epic adventures in the west, we ventured farther into Canada’s heartland to Yoho National Park. The park borders Banff in the east and Kootenay in the south, and was the second national park to be created in Canada. To honor the rich heritage of this beautiful land, we created a mixed drink. What else were you thinking? A sandwich? Come on. You should know us by now. 

The Yoho Snakebite

Recipe:

4oz Lager, drier the better (We used Kokanee due to limited selection)

4oz Apple cider, drier the better. We used Rock Creek in the video.

Sweeten with spruce tip syrup.

Garnish with spruce tips.

Starting JoieFarm: Heidi Noble

Winery founder Heidi Nobel shares the story of starting JoieFarm

Starting JoieFarm way back in 2003, JoieFarm began as a cooking school and gastronomic guesthouse. As a poor cook and a waiter, we had a dream, but we didn’t have any money.

So we spent our only cash repainting the farmhouse bright red. We needed to make it legit. Then we ran gastronomic weekends, wine classes, and eventually rented space in a nearby vineyard. Between the two of us, we had about 200 clients for our wine from our past experiences. We sold our initial inventory in two weeks.

In 2005 we did something super crazy…

Our first run of rosé sold so quickly, we decided to make 1,200 cases. Our neighbors thought we were insane. We also started making our noble blend. Back then, Vancouver was in a small plate revolution. Based on our understanding of Northwest cuisine, we blended our wine to match. I love my job.

I love the change of seasons, and I love the fact that I work outside every day.

This idyllic neighborhood on Vancouver’s West Side provides a haven for all things natural, organic, and granola. Yoga, Lululemon, and Teslas abound. Our custom-made Kitsilano cocktail pays homage to the neighborhood’s hippie vibe.

The Kitsilano Cocktail

45ml VING Kale, Cucumber, and Lemon Vodka

25ml Honey

25ml Fresh lemon juice

15ml Fino sherry

3 dashes Bittered Sling celery bitters

Shake over ice, serve neat. Garnish with cucumber and celery leaf.

Vlog 4: Vancouver Cocktails: A Whirlwind Tour

Vancouver cocktails: a few of our favorite things

First stop, The Modern Bartender. What good is a cocktail expert without his tools? I’m not exactly sure, but he won’t be mixing drinks. This great little shop on E. Pender in has everything you need to craft amazing beverages. It’s basically a candy store for the cocktail obsessed.

Next up, Whiskey Wiseman Nick Harborne took us to the Irish Heather. Here, we met possibly the most knowledgable whiskey expert we’ve ever seen. We then crafted a smokey cocktail we affectionately named Camp Vickie (it has Miss Vickie’s potato chips in it!!!).

The Shameful Tiki was our third stop, and we’d definitely recommend a visit. Check out our linked post for full details on the amazing tiki vibe.

And what would an exploration of Vancouver cocktails be without a trip to Keefer Bar, one of the world’s 50 top cocktail bars?

We then made a custom cocktail to embody the awesome hippie vibe of Kitsilano. Check it out.

Vlog 3: Disc Golf On Pender Island

We took a ferry to Pender Island, got some disc golf practice, and had an amazing meal. Check out what a Nimble night of disc golf and cocktails looks like.

Pender Island actually hosts one of the most unique disc golf courses in the world. It’s situated in the Strait of Georgia, so you’ve gotta take a boat to get there. When it’s not raining out, the island boasts perfect summer weather.

JoieFarm Winery, Quartermaster JJ Skidmore, and the Joie de Vivre cocktail

At JoieFarm Winery in Naramata, BC, JJ Skidmore treats the Nimble team to a tasting. JJ and the JoieFarm crew love rosé, and their passion results in amazing wines. The Joie rosé is a beautiful summer wine.

Creating a custom cocktail for JoieFarm

JJ and his colleagues love wine, and we love cocktails. So we created something special for them: the Joie de Vivre cocktail.

The Joie rosé contains awesome strawberry notes and epitomizes the perfect summer wine. We decided to compliment the rosé in our custom cocktail with Hendrick’s Gin. The gin uses cucumber and rose distillate, which should pair perfectly with the wine.

We’re also using cucumber, lemon, a rhubarb syrup (freeze chopped rhubarb, thaw it in the fridge, and then soak in a simple syrup overnight), and hand-juiced lemons.

Recipe:

1.5oz Hendrick’s

1.5oz Joie rosé

35ml Rhubarb syrup

.75oz Lemon juice

Cucumber

Shake over ice, serve on the rocks. Garnish with a cucumber ribbon.

“The Offering” Cocktail at Pacific Rim National Park

A Cocktail in a Hut on the Beach –
Stress Test at 1st of 29 Canadian National Parks

When you’re embarking on an adventure as epic as our cross-Canada tour, you’ve got to do some serious planning.  Since Nate, Kyle and myself will essentially live out of a small trailer for our trip, we have to pack carefully and only bring what we need.  Our meals, water usage, electricity, and media storage also require intentional budgeting. Our first stop, Pacific Rim National Park, gave us an opportunity to evaluate our gear and our plan. We called it our ‘stress test.’

According to Wikipedia, a stress test is

“a form of deliberately intense or thorough testing used to determine the stability of a given system or entity.”

Since the three of us will be together pretty much 24/7 for the next four months, our stress test also evaluated our relational dynamics. Thankfully, we can stand each other pretty well!
When we got to Pacific Rim, we learned that there bears and wolves had been sighted in the park earlier that same day. Kyle trembled for a bit (he might deny it, but I saw him shake).

The park itself spans over 500 square kilometers and three distinct regions: Long Beach, the Broken Group Islands, and the West Coast Trail. We camped at Green Point campground at Long Beach and filmed the creation of a bespoke cocktail in a driftwood cave.

A Cocktail on a Beach – “The Offering”

The cocktail, called “The Offering”, is the first of 10 bespoke cocktails that we’re creating for Davines (the organic hair care products company) throughout our trip.  For this first cocktail, Davines wanted something that incorporated tobacco into the drink as a shout out to the historical tobacco industry of Virginia. They chose the name “The Offering” to pay homage to the native American tradition of the sacred offering of tobacco. This cocktail definitely presented a challenge. Working with tobacco in cocktails can be dangerous if you don’t know what you’re doing. To keep the cocktail safe and flavorful, we decided to pull the flavor from the tobacco by infusing a small amount of it into honey.
